There is a little taco stand in past when Ember and I went on road trip for Route 66 where we had street taco and they are the ultimate fast and cheap Mexican food where I did tried potato taco. I fell in love. The only problem is that they can be a bit high in calories with deep fried hash brown wedges, white sauce, and tortilla. I knew I could make a really good copy of recipe I saw that was a whole lot healthier. And I did!
There are so easy to make and taste fantastic. When I shared on my Route 66 short film last year where you can find it at my Facebook page, I can’t remember which episode it was that we were having Mexican for dinner I got lots of “What are those” comments and I knew I needed to share these with you all right away!
How to make these awesome tacos:
Put hash brown wedges onto a baking sheet. Spray the sheet and the wedges with olive oil, this is so important as it crisps it up and give it the feel of being fried. Place in the oven at 425 till crispy about 5-10 minutes then flip through another 5 minutes.
Warm up the tortillas to make it soft.
Place a tortilla on a plate. Layer a good amount of cabbage onto the tortilla. Add hash brown wedge onto the cabbage. Slice some avocado onto the wedge. Top with your favorite salsa and white sauce but I used greek yogurt anyway.
Also you can add some egg scramble, bacons, other things together as a breakfast way too. So good!
