Say It, Sign It, and Bake It: Carrots Cake CupCake

Spring has sprung! Flowers are popping up everywhere and I can readily buy creme eggs. Yes I’m in love with these creamy chocolate goodies!

I have an exciting to make an announcements that I have joined with two beautiful hearing ladies, their name are Britney Puetzer and Pam Renall as both of them have done funny short video in TikTok. It had a good laughing to watch them!

Somehow I knew Pam for a long time I can say around 5 years and she contacted me after she saw me doing my blog cook shows. She brought up her ideas with me and Britney who I haven’t met. Pam introduced us and we all ladies discussed to create something fun for our new TikTok.

I am thrill that we are officially build our project together for our comedy cook show on our new TikTok!

Say it, Sign it, and Bake it!

Britney is “Say it”, I am “Sign it”, and Pam is Bake it. Makes sense? It is all about cooking and laughter translate across all languages. I loved the idea of making an unities between hearing and deaf to work together. I am excited to see us growing from there! Please follow us at @sayitsignitandbakeit at TikTok!

Here are our first cook show are “Carrot Cake Cupcake” and here’s the list of ingredients and the kitchen tools you should need.

Suggested Kitchen Tools:

Whisk
Muffin tin and cupcake liners
Grater or food processor to grate the carrots
Electric or hand mixer
3 large bowls and large rubber spatula

Makes 12 Cupcakes

FOR CUPCAKES YOU WILL NEED:

1 1/4 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon fine sea salt
3/4 teaspoon ground cinnamon
1/2 cup canola or other vegetable oil
1/2 cup granulated sugar
1/2 cup lightly packed brown sugar
1 teaspoon vanilla extract
2 large eggs
1 1/2 cups grated peeled carrots (2 to 3 medium carrots)
1/4 cup raisins

FOR CREAM CHEESE FROSTING YOU WILL NEED:

8 ounces full-fat block cream cheese, softened to room temperature
1/2 cup unsalted butter, softened to room temperature
1 teaspoon vanilla extract
Pinch fine sea salt
3 cups powdered sugar (confectioners sugar), plus more as needed
Pinch ground cinnamon

Making the batter

In a large bowl, whisk together all-purpose flour, baking soda, fine sea salt, and ground cinnamon well blended.

In a separate bowl, whisk the oil, sugar, brown sugar and vanilla. Whisk in eggs.

Grate 3 medium peeled carrots to make 1 1/2 cups and stir that in along with 1/4 cup raisins.

Let’s bake it

Divide the batter between the prepared muffin cups, filling about 3/4 of the way to the top. Bake in oven 350 degree for 20 to 25 minutes.

Now we start the cream cheese frosting!

In a large bowl, beat the cream cheese, butter, vanilla, and salt. It takes about 2 minutes. Yum!

Beat in the powdered sugar, a 1/4 cup at a time until fluffy. For a thicker frosting, add an additional 1/4 cup to 1/2 cup of powdered sugar.

Beat in a pinch of ground cinnamon for a spiced frosting

Frost cooled cupcakes and enjoy!
