I love avocados and I love them, even more, when they are stuffed with yummy salsa and black beans and covered with melted cheese! That’s something to have some idea for Cinco de Mayo day around the corner so I’m sharing some of my favorite Mexican foods! I mean it I just love them! They taste like butter to me. Ember like to sprinkle some sea salt and pepper on them and eat them with a spoon straight out of their natural “shell” and I don’t them her!
I feel like there should be some sort of recipe to make this, but like all of my recipes, there isn’t really. There are general idea of mine that can lead you but you can turn this into anything you want. Love peppers? Add them! Hate tomatoes? Ditch them!
Here is what I did….I took a few avocados and cut them in half. Carefully remove the seed. You don’t have to be careful if you don’t want to….but I don’t want you to get hurt so I’m going to say to be careful, okay?
Heat up some black beans. I used canned ones. Open your favorite jar of salsa. Tear open a bag of shredded cheese (This is when I get a little picky. You can use any cheese you like but I always use cheese that is part of Mexican).
Now scoop some beans into the little avocado hole. Top it with salsa and then sprinkle with cheese.
Place on a baking sheet and broil till the cheese is all melted and golden brown.
Eat and enjoy! Avocados are in season right now which makes them fresh and affordable! Pick some up asap!
